Dwayne Bannon Harrison – Indigenous Ambassador & Cultural Leader
A proud Yuin man and Indigenous Ambassador for Trippas White Group, Dwayne Bannon Harrison is a visionary in First Nations cultural storytelling and native cuisine. With over 20 years of experience in cultural ways of knowing, Dwayne has dedicated his career to sharing and preserving the deep heritage of Aboriginal food, knowledge, and traditions.
As the founder of Ngaran Ngaran Culture Awareness (NNCA) and Mirritya Mundya, he has been instrumental in creating immersive experiences that connect people to Country, weaving together ancient wisdom with contemporary innovation. His work bridges the gap between tradition and modern gastronomy, offering authentic insights into the significance of First Nations ingredients, sustainable practices, and the stories that have been passed down for generations.
Through his role at Trippas White Group, Dwayne collaborates on culinary experiences, educational initiatives, and cultural engagements, ensuring First Nations voices, histories, and flavors are celebrated across some of Australia’s most iconic venues. His passion for reconciliation, education, and food sovereignty continues to inspire and shape the future of Indigenous representation in the hospitality industry.

With a background in Michelin-starred kitchens across Europe, Chef Guillaume Gritteret brings a refined, contemporary approach to Sydney Tower’s dining scene as Group Executive Chef for Trippas White Group. Originally from France, he expertly blends classic French technique with fresh, seasonal Australian ingredients, curating sophisticated yet approachable menus.
